Seabass

Latin name - Dicentrarchus labrax.

 

Seabass are brilliant masters of camouflage, they can within a few seconds change their color, they can appear blue, yellow, white or dark dots, spots and stripes, even that after a while disappear again. Pagatavošana:


Nomazgā un notīra puravu, cukini un burkānu, visu sagriež tievos salmiņos. Nomizo un sagriež sīkos gabaliņos šalotes sīpolu. Fileju noskalo, nosusina un ierīvē ar sāli, pipariem un citronu sulu. Cepam formā izkausētā sviestā apcep šalotes sīpolus, pievieno dārzeņus un zirnīšus, turpina cept 1 min. Virsū liek zivs fileju, pārlej to ar vīnu, zivju buljonu un atlikušām sviesta piciņām. Cep 15 min., 180°C. Tad nolej šķidrumu, zivi un dārzeņus tur siltus formā. Šķidrumu izkāš un karsē, līdz tilpums samazinās uz pusi. Olas dzeltenumu sakuļ ar saldo krējumu un iejauc atdzesētā buljonā. Zivi un dārzeņus pārlej ar mērci, pasniedz pārkaisītus ar kārveli.
